Why should special LED tubes be used in meat counters?

Previous studies of pork suggest that surface temperature is a more important factor than light exposure in terms of discoloration. As the surface temperature rises, the growth of microorganisms on pork in freezers of grocery stores increases.

It has been found that the surface temperature of pork increases proportionally with the intensity of the lighting, regardless of whether it is an incandescent lamp or a cool white fluorescent lamp. For all meat, even slight increases in surface temperature accelerate oxidation and cause bacteria to grow exponentially, causing the meat to brown and decompose.

Later studies have shown that even at the lower levels of myoglobin in pork compared to beef, pork is still sensitive to oxidizing light exposures. The meat turns brown to gray depending on prolonged exposure to light and UV radiation (fluorescent tubes emit up to 10% UV light!). However, the color change is not as dramatic as with beef.

The color of the pork is the most critical decision factor for the consumer when choosing pork pieces from meat display cases in the supermarket. Fresh pork is optimally pink. Studies have found that the shelf life of pork is more limited by the development of a brown or gray color (which develops long before the meat spoils) than by any other factor.
